Ingredients and Directions:
1 yellow cake mix (dry mix only)
1 1/4 c orange juice
3 egg whites
1/4 c oil
Zest from one orange
Combine all ingredients and beat on medium speed for 2 minutes. Pour batter into lined muffin pans filling about 2/3 full. Makes 24 muffins. Bake at 350º for 18-20 minutes.
Glaze:
1 c powdered sugar
Orange juice from two oranges
Zest from one orange
Stir ingredients together until smooth. Dip the tops of the warm muffins into the glaze and place on the cooling rack. Store in an airtight container. These muffins freeze well.
