Healthy Orange Muffins |
This morning I made orange muffins and here's how I did it:
2 cups flour
1 T baking powder
1/2 t sea salt
1 egg, slightly beaten
1/3 cup honey
Zest from 2 naval oranges
1/2 cup fresh squeezed orange juice
1 t orange extract
1/2 cup milk
1/8 cup oil (I used canola)
In a large bowl mix all of the dry ingredients. In another bowl combine the egg, honey, orange zest, orange juice, milk, and oil. Add this to the dry ingredients and stir until moistened. It's ok if the batter looks lumpy. Use a cookie dough scoop and place batter into lined muffins cups, My favorite is to skip the liners and just use a small amount of coconut oil in my tins.
Bake at 350 degrees for 18-20 minutes. Makes 16 yummylicious muffins!
