Healthy Energy Bites

With soccer games on weekends, we needed something that is easy to eat quickly, and not too messy when you just need some energy between meals and games.  These were great to have along and were given a "thumbs up" by my taste testers! I found this recipe at asouthernmom.com
What you need:
  • 1 c oatmeal
  • 1/2 c peanut butter
  • 1/3 c honey
  • 1/2 c Crisp Rice cereal (aka Rice Krispies)
  • 1/4-1/2 c ground flax seed
  • 1/2 c chocolate chips or raisins if you prefer
  • 1 t vanilla
Mix all ingredients together and refrigerate for 30 minutes
Shape into small balls, crush and compact together(they stay together better this way-I also added just a bit more peanut butter and honey) You can vary the ingredients and amounts for your family.
Store in airtight container

Since it has been warm I keep mine in the fridge. I think it helps them keep their shape better too.

    Yum!!! This was so easy for my 4 year olds to help with. All ingredients we just so happened to have on hand (and needing to rid of as we hardly use) except the flac seed. I substituted french vanilla slim fast powder (also needed to rid of, was left by a guest) and YUM!!! I'm allergic to milk and with a busy morning getting the older two to school/feeding and dressing all 4 I sometimes dont have time to eat. These will be an awesome quick breakfast for me :0)

  4. great! Glad you liked them, if you haven't tried the chewy granola bars yet, they are almost the same recipe and just as easy! You can also add flax seed to them and dried fruit if you don't want to add the choc. chips!
