Apple Bread

My favorite fall scents and flavors are cinnamon, nutmeg, ginger and cloves. One of the reasons I love making apple bread is that your home will be filled with the best fall smells! This bread reminds me of coffee cake that my grandma used to make. It was the perfect choice this morning since our weather is cooler and fall is on the way! 😊
Ingredients for Bread:
1/2 c butter, room temperature
2 eggs
2/3 c white sugar 
2 tsp vanilla extract
1 2/3 c flour
2 tsp baking powder
1/4 tsp ground cloves
1/2 tsp nutmeg
1 tsp cinnamon
2/3 c buttermilk or add 2 tsp lemon juice or white vinegar to 2/3 c white milk, let it sit for at least 5 minutes, then add it instead of buttermilk. 
2 medium apples, I used honey crisp apples, peeled and chopped into small pieces.
Ingredients for Topping:
3 T brown sugar
1/8 tsp cloves 
1 tsp cinnamon 
Mix it together with your fingers or a fork and sprinkle over the top of the bread batter.
Directions:
On low speed beat butter and sugar until smooth. Add eggs and vanilla and mix for about a minute. Add dry ingredients and combine until mixed together. The batter will be fairly thick.
 
Add the buttermilk while mixer is on low speed, it likes to splatter. Stir the apples into the batter with a spatula. Use parchment paper or grease a 9x5 inch loaf pan. Add the batter to the pan and sprinkle the top of the bread with the brown sugar topping.


Bake 350°F for 45-50 minutes. I always use grandma's method and insert a toothpick into the bread, if it comes out clean, it's done. If not, try another 5 minutes until it's ready.

I was trying to think of something for dessert last night and homemade bread pudding was my choice. Our Dad was not a dessert lover but bread pudding was one of his favorites. Homemade Goulash

Last weekend I made meals for the freezer. It takes a few hours but this will save you time during the week (in case you have nights like I do when you don't feel like cooking) and your family will love it! I adapted this recipe from Paula Deen (it's called Bobby's Goulash). I used organic ingredients but use the products of your choice. Dad's Homemade Peach Cobbler

Peach Cobbler fresh from the oven! One of our favorite desserts is Dad's peach cobbler. This is a recipe that I use when I need a quick dessert. I always have the ingredients and it only takes a few minutes to mix it up. I modified it for gluten-free by making a change to the flour type, just in case you're looking for gluten-free. You can use fresh or frozen peaches, or even canned peaches work. I usually freeze enough Colorado peaches to take me through the seasons so I use those. This recipe makes about 6 servings.
