Our Favorite Cream Cheese Mints

I recently made this recipe for my son's Confirmation. It has been used for multiple occasions and celebrations in our family. Everyone loves them and we've had several requests for the recipe.  These can be made ahead of time because they freeze well. You will need to use silicone or rubber molds. (They are not the same as the plastic molds for the candy melts). These are usually found at a kitchen or candy  supply store or they can be ordered online. 

You might want to call in your "helpers" with these little sweeties, they are fun to make but they do take some time.

Here's the recipe:
  • 1  3 oz. package cream cheese
  • 2 1/2 c powdered sugar
  • 1/8 - 1/4 tsp flavoring (depending on how strong you want it, if you make the whole thing one flavor it is closer to 1/4 tsp but I usually split the dough into 3 and use about 1/8 tsp for each section) If you use oil, such as peppermint, you only need a few drops.
  • Food coloring - a few drops (I split the dough into 3 parts and use a different flavor and color for each one).
Mix the powdered sugar and the cream cheese and knead like bread, adding powdered sugar until the dough is not sticky. Using your hands form small balls, dip the balls and the molds into granulated sugar. Press dough into mold. When you fold the mold back, the mint will come out. Place on wax or parchment paper to let them rest overnight or at least 4-6 hours. They won't get hard but they will set up and dry a little. They can be frozen and taken out to serve when needed. This recipe made a little over 200 mints. Keep in mind, they are tasty so people usually take a few... or 6!

Grandma's Bread Pudding and Caramel Sauce

I was trying to think of something for dessert last night and homemade bread pudding was my choice. Our Dad was not a dessert lover but bread pudding was one of his favorites. Homemade Goulash

Last weekend I made meals for the freezer. It takes a few hours but this will save you time during the week (in case you have nights like I do when you don't feel like cooking) and your family will love it! I adapted this recipe from Paula Deen (it's called Bobby's Goulash). I used organic ingredients but use the products of your choice. I would have liked to use fresh tomatoes from the garden but my tomatoes weren't quite ready. You can also make it gluten-free by using gluten-free elbow macaroni. It's so tasty - my family loved it! Dad's Homemade Peach Cobbler

Peach Cobbler fresh from the oven! One of our favorite desserts is Dad's peach cobbler. This is a recipe that I use when I need a quick dessert. I always have the ingredients and it only takes a few minutes to mix it up. I modified it for gluten-free by making a change to the flour type, just in case you're looking for gluten-free. You can use fresh or frozen peaches, or even canned peaches work. I usually freeze enough Colorado peaches to take me through the seasons so I use those. This recipe makes about 6 servings.
