Chicken Parmesan

This recipe was simple to make and depending how thick your chicken is, can be ready in 30 minutes.  You can also pound your chicken breasts to thin them first to cook faster.

Here is what you need:
  • 4-5 chicken breasts, I use boneless, skinless but you can use what you like
  • 2 c of bread crumbs with seasoning - I make my own so I added garlic, oregano, rosemary, salt, pepper and fresh grated Parmesan
  • marinara or pizza sauce (you can make it or buy it; I put 2-3 T on each piece of chicken)
  • mozzarella slices
I coated my chicken with the bread crumb mixture, then put them in a hot pan with olive oil (on the stove) uncovered about 25-30 minutes (check to make sure they aren't pink inside).
Then I took them out and topped them with sauce and a slice of mozzarella. Put them in the oven 350F for about 10 minutes until the cheese is melted and bubbly (they should be fully cooked before you put them in the oven, this is just to heat the sauce and melt the cheese).

    I made this without the bread crumbs because I didn't have any and it still turned out good!
