Blueberry Pancakes


Simply Homemade Blueberry Pancakes with Blueberry Sauce

I was so hungry for blueberry pancakes on Mother's Day, I decided to make my own Mother's Day brunch! My favorite blueberry pancake recipe is simple and delicious! For the finishing touch I like to use fresh blueberries to make my own blueberry syrup, our favorite recipe is here Simply Homemade Blueberry Syrup or Sauce. Don't forget a special treat at the end and top off your pancakes with a dollop of real whipped cream!

Dry Ingredients:
2 cups all purpose flour
3 T organic cane sugar (or white sugar)
1 tsp baking powder
1/2 tsp baking soda

Whisk these ingredients together in a medium bowl (I use a Pampered Chef batter bowl). Make a "well" in the middle of the ingredients so you can pour your liquid ingredients there. It's easier to mix that way.

Liquid ingredients:
2 eggs
1 c milk
1 c plain, Greek yogurt
1 tsp vanilla
1/4 c melted butter
1 cup fresh, washed blueberries 
Whisk the liquid ingredients in a small bowl, then pour them into the "well" of the dry ingredients. Stir together with a wooden spoon. Be careful not to over-stir, you only need to stir the batter until the most of the lumps are gone. Add 1 cup fresh blueberries and fold into the batter. You can add more milk if the batter is too thick, add a small amount at a time until you get the consistency you like.
Heat an electric griddle to 325F. I use a 1/4 measuring cup to measure my batter and pour it onto the griddle. It only takes about 45 seconds before you have to flip them, they will have bubbles in the batter and look a little dry on the top. Then flip the pancakes until done, about a minute or so.
This recipe makes 12 large pancakes, if you have leftovers, you can freeze them.

Heat your syrup and pour over your yummy blueberry pancakes! Don't forget the dollop! Enjoy!

Mother's Day Craft for Kids



 
Happy Mother's Day!  Here's a quick card idea for kids if you need one. I did this one with my daycare babies and toddlers yesterday. I just traced the infant's hands and cut and pasted. For the 2 year old, I traced his hand and he did the gluing, and put some bug stickers on his flower pot. I hope you have time to relax and enjoy your family this weekend!

Grandma's "Darn Good Cookies"


I found this old recipe stuck in one of my recipe books. It was from our husbands Grandma Clara (on a side note, my sister Tammi and I married brothers, so we share the same in-laws...and yes, it's legal..we always get asked that). Grandma Clara had made these and had written at the bottom of the recipe "Alias, Darn Good Cookies" as it turned out, it's true, so I am keeping the name. It's one of those recipes that always sounded like a lot of work, but it really wasn't once I started, it only took a few minutes to whip them up and roll them out.  

Here's what you need:
  • 1 c. brown sugar
  • 1 c. white sugar
  • 1 c. butter, (Grandma used Crisco shortening, but they turned out just fine with butter)
  • 2 eggs
  • 2 tsp baking soda
  • 2 tsp cream of tartar (if you don't have this, you can substitute the same amounts of  BAKING POWDER instead of the baking soda and cream of tartar)
  • 1/2 tsp salt, I used salted butter instead of adding salt
  • 3 1/2 c flour, I accidentally forgot to add the 1/2 c to the 3 c of flour, they turned out a softer, flatter cookie, but still delicious
Mix all the ingredients either with stand or handheld mixer. I used my cookie scoop, then rolled them into balls and dipped the balls in sugar. Place on cookie sheet, flatten just slightly with the bottom of a glass or whatever you have. Bake 350 degrees about 10-12 minutes. They will continue to bake when you take them out of the oven, they almost look like they aren't done baking, these should not turn brown. They are like a crisp sugar cookie on the outside and soft in the middle. You can frost them or not, they are yummy either way!
