Shredded Chicken Sandwiches

During the week our evenings can get pretty busy, so I like meals that I can make up ahead of time. Here is an easy chicken recipe that can be made ahead and served two different ways.

What you need for meal 1: Shredded Chicken Sandwiches
  • Chicken (whatever is on sale or what you like), I used chicken with the bones and skin on. I like to cook it in my crock pot that way for the extra flavor and then take out the bones and skin after it's cooked. So for this recipe I used half a chicken. I have also made it using about 4-5 chicken breasts and thighs.
  • 3-4 cups chicken stock or water
  • 1/2 onion sliced
  • Seasonings: salt, pepper, celery salt, garlic and a bay leaf (whatever you like)
  • Buns
I put my seasoned chicken and about 2 c of water, onion and my bay leaf in the crock pot on high about 4 hours (you may have to adjust this depending on your chicken and crock-pot). I always thaw my chicken first. After it's cooked I take the chicken out and shred it with a fork, sometimes I pour the liquid out and freeze it for stock later. Then I put the chicken back in the crock pot with about 3 cups of stock and add seasoning if I need to. You want this to have quite a bit of liquid to keep the chicken moist but it shouldn't look like chicken soup (soup recipe was also posted earlier). Since the chicken is cooked, you can eat it whenever, I usually leave it about another 30-45 minutes just to let the seasonings and broth flavor the chicken then serve it on buns with a side of roasted potatoes and peppers.


What you need for Meal 2: Buffalo Chicken Sliders
  • Franks Hot Sauce or whatever buffalo sauce you like, I like this sauce because it has a good flavor and a little kick..or a lot of kick-depending on how much you use!
  • mini buns or regular buns (I made mine from the Sweet Bread Recipe) we posted earlier.
I just reheat the chicken in the microwave with the sauce on it and serve it in the buns, you could also top with Blue Cheese or Ranch dressing.

I was trying to think of something for dessert last night and homemade bread pudding was my choice. Our Dad was not a dessert lover but bread pudding was one of his favorites. Homemade Goulash

Last weekend I made meals for the freezer. It takes a few hours but this will save you time during the week (in case you have nights like I do when you don't feel like cooking) and your family will love it! I adapted this recipe from Paula Deen (it's called Bobby's Goulash). I used organic ingredients but use the products of your choice. Dad's Homemade Peach Cobbler

Peach Cobbler fresh from the oven! One of our favorite desserts is Dad's peach cobbler. This is a recipe that I use when I need a quick dessert. I always have the ingredients and it only takes a few minutes to mix it up. I modified it for gluten-free by making a change to the flour type, just in case you're looking for gluten-free. You can use fresh or frozen peaches, or even canned peaches work. I usually freeze enough Colorado peaches to take me through the seasons so I use those. This recipe makes about 6 servings.
